"Umbria" Supper Club

There is not a better region than Umbria to host a Fall supper club. I was there a month ago since it's one of my family favorite place to visit when I'm in Italy, my wife looks at artisanal souvenirs while I look at wildboar salami and Truffle and I dream having a "star trek" tele transportation to redirect those into my kitchen....I migh have to wait a few year for that so in the midtime let's get them cooking here, as my mom says: "Non si sa mai" (never know what it can happen tomorrow):
Of course my homemade focaccia Barese

Lenticchie di Castelluccio (red wine lenitls)
Salsicce e Uva(Fennel Sausage and Sweet grapes)
Trota al Tartufo (truffle flavored truffle)
Pizza di Spinaci (Spinach pie)
Massimo's Handmade pappardelle with Wildboar ragout
Galletti alla frutta (Roasted Cornish Hen with Pear, Apples and Chestnut)
Kale and Pancetta
Pere cotte (Cinnamon Cooked Pear with freh whipping cream)
Roasted Chestnut and Cantucci
BYOB as always of Barolo, My fave red wine from Umbria is "Sagrantino di Montefalco" and white is "Orvieto Classico".
