Roasted / B.B.Q Aam Panna (A tangy thirst-quenching summer drink of raw mangoes & mint with Indian spices.)

Murgh Makhani (Chicken simmered in butter & tomato curry, a favourite of North India.)

Cauliflower and Potato in Tomato Masala

Cumin – Mint Raita Salad. (Mixed Vegetables in yogurt)

Saffron Rice Pilau

Instructor Biography: Vinod Lohtia, Red Seal chef

Chef Vino’s interest in cooking started at 11 years old when he tried to make Aloo- Tikkia and chutneys at home. As he grew up he watched his mother cook and his passion for cooking grew. He studied in Hotel School of India to obtain a Four year's Post Diploma. Soon after, he started teaching cooking to first year students. Eager to learn more about the culinary industry, Vinod, at age 20, left India for the culinary mecca of Europe, cutting his teeth at places like Dom Hotel in Koln, West Germany, the Vienna Intercontinental Hotel in Vienna, Austria and Inn on the Park Hotel in London England. Then he was off to Canada working at the Cara Flight Kitchen at the Edmonton International Airport. It was the start of several years at various operations in Alberta and Saskatchewan, including the Heritage Inn in Moose Jaw and Wapta Lodge in the Canadian Rockies. Edmonton beckoned again and Vinod has since created culinary delights at the Royal Glenora Club, Centre Suite Hotel and Fantasyland Hotel. He has been a member of Confrerie de la Chaine des Rostisseurs and the Edmonton Chef Association and was also awarded gold in Menu Competition from Alberta Hotels and Restaurants Association. He subsequently obtained red seal certification and certificate chef de cuisine. Chef Vino is also former owner of the Spice Rack restaurant, which was selected a one of the Top Ten restaurants of Edmonton in 1994. Although he loves other cuisines, he never lost the love or passion for his native food. With his background and experience, he now to teaches classes for those who crave Indian cuisine with its simple and exciting dishes.
