Description

The British Columbia Study Tour is an experiential learning experience for International and Domestic students from the George Brown College Chefs School at the Centre for Hospitality and Culinary Arts. The tour will provide an opportunity for students to develop fundamental knowledge of sustainable menu development and food and wine pairing while experiencing the regional ingredients and the cuisine of Canada and British Columbia. Each student will be deep sea fishing with 8th generation fisherman to understand the changes in the fishing industry. The students will forage and harvest ingredients and prepare a menu "from Earth to Table". During the study tour, they will hone their craft and network with influential chefs, farmers, fishers, and foragers of British Columbia to better understand the importance and challenges of regional cuisine from experts in their respective fields.

To raise funds for the study tour, students will prepare a six-course meal at The Chefs' House under the guidance of Culinary Professor Chef Riley Bennett. Mission Hill Family Estate Winery will provide pairings for each course.
