The Chefs' House is delighted to welcome Chef Jose Chesa and Chef Ramon Simarro, along with the students of George Brown College's Centre for Hospitality & Culinary Arts, for an exclusive evening of Spanish Cuisine.

This evening's menu will feature a selection of Spanish tapas, followed by a three-course banquet dinner, accompanied by a selection of Spanish wines.

The son of an Aragonian chef, Chef Jose Chesa grew up cooking alongside his father and grandmother. Jose then travelled the globe, honing his craft at prestigious venues including Arpège, Can Fabes, and Fleur-de-Sel. Portland became home for his family and restaurant Ataula in 2013. In early 2016 he co-founded Portland's first xurros (churros) shop, 180 Xurros with wife and partner Cristina Baez. Jose was chosen as Portland Monthly’s Chef of the Year and in 2013, he was nominated for Best Chef NW by the James Beard Foundation in 2015, 2016, 2019. In 2019 he founded Egg White Hospitality, and in early 2020 he opened MASIA, his love letter to Spain in the new Hyatt Centric Hotel in Downtown Portland. After a time at the New York Botanical Garden as Executive Chef, Jose is now at Blue Hill at Stone Barns.

Born in Barcelona, Chef Ramon Simarro has been Executive Chef of Madrina Bar y Tapas at Distillery Restaurants since January 2018, and he has extensive experience in Michelin-starred restaurants before that. Working at his uncle’s patisserie in Lleida, Simarro was immersed in the world of food since he was a boy. At the age of 17, Simarro began working in a traditional Catalan Restaurant in Capelladas. Three years of studies at Escola d’Hosteleria de Barcelona landed him a place in the kitchen of three Michelin-star Raco de Can Fabes, at the young age of 22. He went on to earn a Michelin Star at Alkimia in Barcelona before deciding to travel and learn more about other types of cuisine. In London, he worked in the French restaurant Pearl and Japanese restaurant Zuma. Simmaro spent five years as head chef for Can Magi – the banqueting arm of Alkimia and opening the celebrated Fàbrica Moritz. He helped lead the kitchens in the W Barcelona before taking on the kitchens at Hotel Camiral, a PGA Catalunya Resort.
