There are few success stories that can match that of chef, restaurateur and entrepreneur Vikram Vij. Born in India, moved to Austria and then, lucky for us, moved to Canada in 1989 to work at the Banff Springs Hotel. In September 1994, Vikram opened Vij’s Restaurant in Vancouver, which New York Times food writer Mark Bittman said was: “…easily among the finest Indian restaurants in the world.
Vikram and later opened a second restaurant and market called Vij’s Rangoli. Vikram also launched his own range of frozen package meals, Vij’s At Home, as well as Vij’s Railway Express foodtruck and a third restaurant My Shanti. Vikram was a guest judge on Top Chef Canada in 2011 and 2012. He was a judge on the first ever Chopped Canada and he appeared on CBC’s Recipe to Riches. Vikram was also a Dragon on CBC’s Dragons’ Den. Vikram Vij truly is one of Canada’s culinary rock stars.
