Welcome to the world of true competition BBQ! Hosted by 5-time Quebec BBQ Champion and International competitor, Dylan Kier of Blackstrap BBQ.

This full day workshop will explore the history, recipes, techniques and best practices to creating award winning competition worthy bbq.

We will focus on the four categories of Competition BBQ including brisket, ribs, chicken and pork.


1. This workshop will include discussions and in-depth tutorials on:

  • Selecting meats

  • Trimming and seasoning

  • Wood selection and smoking techniques

  • Adaptive cooking techniques for charcoal, gas and pellet grills

  • When and how to wrap meats for tenderness

  • BBQ and meat temperature management

  • When to sauce your meats, and how much

  • Slicing and final presentation

  • Frequently asked questions and troubleshooting at the audience's request


2. Class features to take into consideration:

  • Class will start at 10am sharp and will go all day
  • Class is offered in English only

  • Lunch will be served

  • Class is BYOB (bring your own booze)

  • Maximum 20 people - please provide your Eventbrite registration confirmation upon arrival (registration and payment must be made in advance to reserve your place)
