Dashi Demonstration with Chef Genya Watanabe

Description
Chef Genya Watanabe, Official Chef of the Consul-General of Japan, will discuss the history, uses, and types of dashi before demonstrating its preparation, followed by a Q&A session. There will then be a reception in the Atrium, where guests will be able to sample a variety of Japanese dishes including dashimaki tamago and chikuzen-ni.

About Chef Genya Watanabe
Chef Genya Watanabe studied at the Hattori Nutrition College in Tokyo in 2004, with a focus on kaiseki, traditional multi-course Japanese cuisine. Since then, Chef Watanabe has worked at several kaiseki restaurants in the Tokyo-Yokohama area, including Yokohama NADAMAN, Shunkashuto, and Imakoko. He moved to Toronto in the fall of 2017 to be the chef for the Consul-General of Japan Ms. Takako Ito. In Toronto, he promotes the beauty of Japanese culture through his use of seasonal ingredients sourced both locally and from Japan in his kaiseki cuisine.
