What is a Saeta? Or an Alabanza Flamenca?

Learn the answers to these questions and more, all while Flamenco singer Caridad Vega invites us to her kitchen in Andalusia to prepare delicious torrijas de vino (Spanish style French Toast with white wine) and sing for us. This recipe is a typical Andalusian dish served during this special week.

Semana Santa

A week long celebration, taking place the week before Easter. Semana Santa is an important religious event, consisting of church masses and street processions. These traditions have been observed throughout Spain since the 16th Century. Communities rehearse their processions and create lavish floats, working for several months every year to prepare.

This year all of the processions have unfortunately been canceled due to the worldwide pandemic.

Recipe

For the syrup:

  • Rind of 1/2 lemon
  • 2 cinnamon sticks
  • 3 cloves
  • 1 kg sugar

Para el almibar:

  • Cascara de limón (medio limón)
  • 2 canelas en rama
  • 3 clavos
  • 1 kilo de azúcar ( no se echa entera, es según como vaya quedando el espesor del almíbar junto al agua que será un litro de agua)

For the Toast:

  • 1 glass of manzanilla/sherry/fortified dessert wine*
  • 2 glasses of water
  • 4-5 eggs
  • Brioche bread (or two loafs of 2-3 days old white bread, a little hardened)
  • Sunflower oil

Ingredientes para la torrija:

  • Un vaso de vino ( manzanilla)
  • 2 vasos de agua
  • 4 huevos aproximadamente
  • Pan de torrija ( en su defecto 2 barras de pan de dos o 3 días, que esté el pan más bien duro)
  • Aceite de girasol un litro

*Manzanilla is a dry sherry wine

Alternatives to Manzanilla are other types of sherry (Jerez wine), French Vermouth or dessert fortified wines. The recipe can be done without wine as well, adding more water.

Caridad Vega

Flamenco Singer (Spain)

Born in Sanlúcar de Barrameda, (Cádiz) in 1980, Caridad belongs to one of the most outstanding traditional flamenco families of Sanlúcar, such as Encarnación Marín “La Sallago”, the consecrated guitarist Manolo Sanlúcar, as well as young promises, such as Ángel Sánchez “El Cepillo” or Paquito González.

At a very early age she began singing flamenco, obtaining several awards accredited for being a great revelation in various types of cantes jondos, among them the “First Prize Cante Bajo Andaluz” at the VII National Festival of Young Flamencos in Calasparra.

Until recently, she was a regular performing of various tablaos in Madrid and Seville, such as Casa Patas, Las Carboneras, Florida Park, Corral de la Pacheca, Villa Rosa, Cristina Hoyos Dance Museum, El Cordobés, La Estación de los Porches … and shows such as “Mariquita appears drowned in a basket”, “Backstage” by Pablo Rubén Maldonado, “Yo, Carmen” from the María Pagés company or “Torero” from the Antonio Canales company.
