Move over Macarons!!! You are so yesterday … The new pastry craze straight from France is "Pâte a Choux"! Known to some of you as “choux pastry”, they are a family of dessert, big and small puffs, all made with the same dough base, which we call “Pâte a Choux”, pronounced “shoo.”
And what comes out from it? Well the possibilities are endless, but here are a few things you will learn in this class
- Choux a la crème (cream puff): the classic cream puff, filled with pastry cream
- Profiteroles: the choux is filled with vanilla whipped cream and covered with warm chocolate sauce
- Chouquettes: cute and simple little puff simply covered with crunchy sugar bits, a childhood fav!
- Eclairs: the long version of the choux, filled with pastry cream
This is a holiday special edition; we will decorate according to occasion, learn to use choux pastries to make savory canapes, and even make an eggnog pastry cream for filling!
You will get to pipe your own pastries, fill and decorate them before taking them home! Recipes will be provided during the class, to take home as well.
No baking experience? Worried it will be too difficult and you won’t be able to do it again at home? We promise this is an easy one to do at home, no expensive equipment, fancy oven and or uncommon ingredients are required, and Valentine’s techniques are fool proof, you can-do at home!
A savory welcome snack will be offered and a glass of sparkling wine (we recommend you plan eating dinner before or after the class as it is a desserts class!).

The food demonstrated and served may contain gluten, dairies, eggs and other ingredients that are considered as allergen, as well as our kitchen, where all kind of food is being handled. Substitutions are not always possible. If any concerns, please inquire prior to booking!
Cash and other payment can be made directly at the cafe, 48hrs before class start. No spots are guaranteed until payment has been received.
No refund will be issue 48 hrs prior the start of the class (including last minute booking). Possibility to send someone in your place can be arranged.
Class may be cancelled if not filled 24 hrs prior with minimum participants, and all deposit will be refunded.
Alcohol, water and snacks will be served during the class. You are welcome to bring soft drinks (outside alcohol not permitted) and other food items for yourself or to share during the class.
Everyone is welcome; however, min required age is 19.
The event is mainly demonstration style. Our kitchen is not equipped for every students to cook, but when possible, I will hand over some work!
Venue is conveniently located 5 min driving distance from downtown Vancouver, easily accessible by public transportation and free street parking is available.
