The final test to become a Certified TAC Tea Sommelier® Professional through the Tea & Herbal Association of Canada.

The final TAC TEA SOMMELIER® certification exam is to be completed in 80 minutes and is made up of the following parts:

1. Tea Preparation (30%): Prepare a serving of tea for your examiners – white, green, oolong, pu-erh or black (chosen by draw).

Time: 10 minutes

Judging will be based on: explanation of the tea selected, equipment used, method used for brewing and how the student interacts through dialogue with examiner

2. Oral Presentation (10%): Answer a question posed by your examiners on any of the following 6 topics (chosen by draw).

i. Explain the categories of tea and the processing method used for each

ii. Talk about the health benefits of tea and how to communicate that to the consumer

iii. Discuss tea pairing and how to cook with tea iv. Outline the evolution of tea throughout the world - history

v. In regards to the business of tea, discuss the different roles and responsibilities of the various stakeholders within the industry

vi. Talk about how to put together a tea menu/tea selection. What key elements do you look for, what issues do you consider, what aspects need to be calculated in your decisions.vii. Describe the growing conditions required for tea growing. How is tea affected by the various elements, what are the critical issues tea growers need to deal with

Time: 10 minutes

Judging will be based on: introduction, remaining on topic, clarity, engaging and interesting

3. Multiple Choice Questions (30%): Answer 60 multiple choice questions.

Time : 30 minutes

4. Blind Tasting (30%): Examine a series of 10 teas and identify: style, type and country of origin (depending on country, what region).

Time: 30 minutes

Judging will be based on: If the tea is a white tea the student must specify if it is White Silver Needle or Pai Mu Tan. If the tea is from India, is it from Assam, Darjeeling or Nilgiri. If the tea is green is it pan-fired or steamed and if it is an oolong is it light or long oxidized.

Please note that we recommend booking the entire day for the exam. Once registration closes we will send you your exam component times (to be conducted via Skype). These will be between the hours of 9:00 am - 5:00 pm (Eastern Time). No exceptions will be made.

The teas for your blind cupping will be mailed to you the week before the exam in a sealed envelope that must remain sealed. You need to have a "tea buddy" present to prepare the teas for you live on Skype the day of the exam.

Students must pass the blind cupping with a minimum of 75% AND an overall score of 75% to pass. If a student fails only one portion, they need to only retake the failed portion.
