FNPA is excited to present our 2nd annual evening of great company followed by a dinner of true elegance inspired by First Nation traditional foods. We would love for everyone to join us for a night of networking featuring a delicious 5-course meal prepared by renowned TCU Place Executive Chef Trevor LaValley.

Introducing Executive Chef - Trevor LaValley Award winning Executive Chef Trevor LaValley has over 20 years of experience in the food service industry. His career began in Banff, where he washed pots in a French bistro; it was then he knew that he had found something he wanted to pursue. Chef Trevor spent 12 years in Vancouver - training, learning and exploring international cuisine, which served him well as he went on to partner in designing and opening multiple restaurants in B.C. and Regina. After working as Head Chef in a few of Regina’s more progressive restaurants, he realized a desire to be part of something bigger. This desire prompted his move to TCU Place in November of 2015, where he has built a positive and creative atmosphere in our kitchens.


MENU

1st Course Served Family Syle

Nokomis ale braised Northern mushroom mousse, crispy silver sage on bannock pita with Saskatoon berry syrup.

Lake Diefenbaker Steel Head Trout cakes, served on pear puree.

Salad

Dandelion greens, wild rice popcorn, candied butternut squash in a beet leather ring, topped with charcoal dust, served with Saskatoon berry dressing.

Main Course

Seared chicken breast with bison sausage and rhubarb, topped with herb pan jus. Served with a slow braised beef short rib with a smoked onion demi, accompanied by wild rice pilaf and roasted diced carrots and zucchini.

Desert

Honey Cake with saskatoon berry mousse, maple sugared bannock with a chocolate leaf and FNPA logo.

Bread basket & Coffee & Tea service included.
