We invite you to our exclusive Food from Spain Paella Demonstration with Chef Mariano Fernandez. Chef Fernandez will lead a tasting and discovery of tapas and paella made with traditional Spanish ingredients.

The class will explore how the unique traditions and culture of Spain contribute to renowned Spanish tapas and paella dishes, the art of cooking classic tapas, and paella recipes. Chef Fernandez will explain the best techniques for creating a traditional paella with perfect socarrat — caramelised crispy rice — on the bottom and perfectly cooked flavourful ingredients on top. You'll discuss the history of this world-famous dish and why it’s a staple of Spanish cuisine.

After the class, there will be a tasting of wines, cheeses, and tapas that celebrate the rich culinary traditions of Spain.

About Chef Mariano Fernandez

Mariano Fernandez has been a professional chef for over 20 years. He trained at the Hotel School El Cortijo (Denia) in his hometown of Valencia in Food & Beverage Management Spain.

He was chef-owner of Restaurant L'Ambigu for over nine years in Valencia, which was named by Esquire magazine in 2005 as one of the Best New Restaurants Outside the US.

Chef Mariano's reputation for culinary talent spreads across Europe and the US, and he was appointed the official representative of Paella for the World Foundation in Canada as well as many other accolades and milestones:
