Dandelions and Spring Greens!
Now is the time for spring greens! And they are everywhere! Amongst them, the almighty dandelion! Did you know you can dry the roots to make coffee? Brew tea with the leaves, toss them in salads! Harvest the flowers for wine making and the most delicious fritters!! Come join us on the first of five adventures at Roma Settlement.
We will safely and responsibly harvest spring greens on the trails, prepare and taste: pesto on Roma bread, greens topped with dandelions fritters and grilled onions vinaigrette, herbal tea from the land.
