Description

Intro to chocolate! The class will include:

  • A short history of chocolate
  • Composition of the cocoa bean
  • Types (this will include a tasting of different varieties of chocolate)
  • Tempering (getting a shiny chocolate with snap)

The class will also:

  • Create their own dark chocolate bark to take home
  • Watch a demo on how truffles are made (by hand and using a mold) to be sampled in class.

Please note that there will be GLUTEN, DAIRY, and NUTS in this class. Please wear clothing you do not mind getting dirty or bring an apron. Please note that each participant must have a bowl, spatula, and cookie sheet.

Erin Tompkins, owner of Bakers Block Chocolates in Edmonton AB trained at Le Cordon Bleu (Ottawa), worked under a professional chocolatier for 2 years, and worked as a pastry chef in Ottawa. This experience allowed her to experiment with different flavours and techniques.
