Learn the ropes when it comes to the wide variety of beef cuts from a butcher himself. Tonight, chef Troy Spicer will make canapes using flat iron steak, create a wonderful pan-seared chimichurri flank steak salad and treat you to braised beef short ribs with polenta and fennel. Next, using inside round, Troy will make a fragrant beef curry.
