Olive Oil Sommelier Emily Lycopolus will guide you through a professional olive oil tasting. Using cobalt-blue tasting glasses certified by the International Olive Council (IOC), you will experience olive oil at its finest. Learn to identify the difference between fresh olive oil and rancid or defective oils, how to taste the difference between varietals, and the subtleties of terroir. This class, focused on Italian olive oil and its traditional cultivars, will explore the nuances of the Italian countryside with producers’ stories and farmers’ experiences. This tasting will be a comprehensive learning experience, discussing health benefits, olive oil chemistry, and more. More, you will learn how to read bottles and product labels effectively, fun and unique ways to incorporate this historic, healthy, and delicious ingredient into everyday life, and feel confident in your purchasing decisions.

Your event registration includes an olive oil tasting kit with one certified olive oil tasting glass and a selection of olive oils for one taster. Delivery to your address (within the GTA) is also included.

About Emily Lycopolus

Olive Oil Sommelier, educator, and author of eight cookbooks, Emily Lycopolus is the Olive Oil Critic. With a degree in Life Science from Queen’s University and an MA in Cultural Anthropology, her love of science and discovery has blended with her deep love of food and flavour — her kitchen is a lab for discovery and learning. Since being introduced to olive oil at an olive grove owned by her husband’s family, she has dedicated her life to the ingredient.

What is an Olive Oil Critic?

Emily Lycopolus is a recipe developer, the author of six olive oil-focused cookbooks, a level-two olive oil sommelier, co-founder of the food-driven creative content agency, and the founder of The Olive Oil Critic ( She will teach you how to read a label on a bottle of olive oil, share tips on tasting the differences between one olive oil and another, and how best to use each one. In addition, she is the expert to train your retail staff to educate and sell more olive oil to your customers, run industry tastings for chefs, or open up the world of olive oil to the next generation of culinary professionals at Culinary and Hospitality schools. Emily has an expert palate and shares her passion with consumers, olive oil producers, gourmet and grocery retailers, and judges at International Olive Oil competitions. Based in Victoria, BC, Emily hosts private workshops, cooking classes, and guided tastings, educating retail and culinary professionals alike about olive oil.
