Plant Based Culinary Vacation to Costa Rica

An all inclusive organic culinary vacation where you will learn how to integrate more gluten free plant-based anti-inflammatiry ingredients into your daily life. This vacation package includes 6 nights stay in a a beachfront hotel in Playa Santa Teresa, Costa Rica. Enjoy breakfast each morning at Casa Cecilia looking at the Pacific Ocean and make your way to The Healing Cuisine for a 5 day course on plant based cooking.
During our 5 days together, enjoy all of our creations from juices, smoothies, breakfasts, appetizers, snacks, mains and desserts and take home your dinner to enjoy after sunset. Take home all of the tools you will need to create and share healthy food with the recipes in the course manual provided.
During the course you will discover how to make delicious creative meals sure to delight and satisfy using high quality organic non-gmo whole foods and superfoods. Learn how to create deliciousness through a variety of cooking and uncooking techniques through hands on experience with Tom Brady and Gisele Bundchen's personal plant based chef in Costa Rica, Joanne Gerrard Young.
Learn basic knife techniques and cuts and learn how to convert and/or substitute regular recipes.
In this course we explore fermentation, sprouting, marinating, braising, blanching, steaming, sweating, sautéing, how to make delicious salads and a variety of dressings, how to cook grains and legumes and how to formulate delicious flavours, balanced menus and meal plans to meet your palettes and your bodies needs and desires.
With a new frontier in human physiolgy comes a new understanding of dis-ease. Learn how to get the greatest nourishment through the principals of holistic nutrition and alchemical culinary magic!

Knife Skills and Techniques
A day with our guest chef and chef Joanne where you will learn practical knife skills, designed to provide confidence and expertise in food preparation, learn techniques from knife sharpening to brunoise, julienned & bataonnet. Get familiar with the tools of the raw food trade to put all of these interesting and wonderfully shaped vegetables to use. We will discuss the fundamentals of marinating, seasoning and flavouring.
Living, Cleansing & Superfoods
Learn the many uses of Coconut, how to open them and how to use them. Learn to use superfoods such as chia, hemp hearts, Spirulina, chlorella, and cacao to create foods that provide instant energy, protein and detoxing. Learn about your circadian rhythm and how to start your day off right with superfoods breakfasts. Create detox salads, soups, superfood smoothies and desserts. Learn to maximize the nutrient bioavailability in your foods with raw food techniques.
Microbes, Probiotics & Fermentation
Learn all about cultured foods, how to make them, why they’re beneficial. We will learn to create probiotic sauerkraut, kimchee, fermented vegetables & coconut or almond yogurt to encourage the growth of our healthy gut bacteria. We will also create a savoury sourdough veggie pancake. With the new frontier in human physiology being the discovery and new understanding of the human microbiome, we will learn how to feed the human microbiome ecosystem with pre & probiotics and gut flora colonizing ferments.
Juicing, Smoothies & Health
Spend the morning enjoying fresh pressed healing juices & smoothies. Learn about the benefits of juicing for instant vitamins and the inherent differences between nourishing with smoothies. Learn what makes a smoothie delicious and how to create food and snacks with juice fibre so that nothing goes to waste.
Learn how to make substitutions in your recipes at home. Learn to create plant based Milks, Cheeses, and Proteins, finding satisfying healthy alternatives to your favourite foods, like Pizza, Lasagne, Burgers, Omelettes and Desserts.
Our lessons range from 4 to 6 hours and they are held mid-day between 10am – 3pm. In this way, you can have a relaxing morning, enjoy yoga or surfing and have the afternoon to take in the sites, massage and sunset.
The Healing Cuisine and Casa Cecilia are located in Santa Teresa/Mal Pais, Costa Rica on the Nicoya Peninsula. To find us you would fly into either San Jose (SJO) or Liberia (LIR) and take a small plane to the Tambor (TMU) airport on either Sansa Air (www.flysansa.com) or Nature Air (www.natureair.com). If the flight schedules are not synchronized, we will be happy to assist you with ground transportation or private charter.
Space is limited to 6 students. A 50% deposit is requested to reserve your space with the balance to be paid upon the day of arrival.
