We are hosting our third Quinto Quarto dinner on Wednesday, September 26, with two seatings available at 6pm and 8:30pm at Campagnolo ROMA. Dinner is served alla famiglia, showcasing offal at communal tables. Quinto Quarto refers to the “fifth quarter” of the animal that Roman butchers often kept for themselves; the poor or lower class could only afford the entrails or fifth “quarto”. Offal, in Roman cooking, is as important as any of the outer quarters,
fore and hind.
Chef de Cuisine Nathan Lowey is dedicated to keeping this important Roman tradition alive!
