Is the Sancocho made with meat, or is it vegetarian?

The most authentic method of preparing Sancocho is with meat (typically chicken or beef). In honour of the day we are sharing together, this version will be cooked with chicken and beef. The dish features meat (chicken and beef) and starches (corn, yuca, banana, potato) in a hearty, rich broth.
