In part 2 of this series, Chef Ben goes through a variety of specialty fresh pasta cuts, such as tagliatelle, pappardelle, and several more. Chef Ben will also discuss the importance of how-to best pair different pasta styles with traditional sauces to maximize the flavors of each. In this session, we will pair a classic meat Ragu (Bolognese) with tagliatelle. Grab your apron and a glass of Nebbiolo, off to Italy we go!
