To coincide with Good Food Month, Mode Kitchen & Bar are hosting an exclusive dinner showcasing some of Tasmania’s best produce with a four-course special menu matched with wines from the award-winning Josef Chromy Winery.

Guests will be taken on a culinary journey of taste and exploration across the evening with dishes ranging from Tasmanian Oysters with ponzu and shallot vinaigrette to Risotto Acquerello, leeks, ocean trout & burnt onion, matched to the perfect award-winning Josef Chromy Wines.

Inspired by Head Chef Francesco Mannelli’s recent visit to Tasmania, the finale dish is one not to be missed; a Tasmanian Whisky baba with lavender Chantilly, matched with a Botrytis Riesling.

Throughout the course of the night, guests will be delighted to a guest talk by Jeremy Dineen, Chief Winemaker and General Manager of Josef Chromy wines.

About Head Chef Francesco Mannelli and Mode Kitchen & Bar

Francesco Mannelli is an award-winning chef and specialist in creating simple yet technically brilliant, delicious dishes which hero fresh, seasonal produce. Originally from Florence, Francesco has more than 20 years’ experience in some of the best restaurants in Australia and Italy, including the past decade in hatted Sydney restaurants, such as Balla, Est. and Bistrode CBD.

A welcoming restaurant setting with a touch of glamour; friendly service with polish; and an uncomplicated menu which embodies great cooking and delicious flavours. Enjoy a specially created set menu by Head Chef Francesco Mannelli who celebrates each ingredients special qualities and showcases impressive technique in the kitchen.


About Jemery Dineen and Josef Chromy Wines

Hand-picked by Josef to lead his namesake wine business, Chief Winemaker and General Manager Jeremy Dineen brings to the establishment extensive wine industry experience, having competed numerous vintages in Margaret River, McLaren Vale and Mitchelton in the Goulburn Valley. Born and bred in Tasmania, his intimate knowledge of Tasmanian viticulture and the complexities associated with contract winemaking was attained during 5 vintages at Hood Wines with as many as 38 vineyards under his care.

Josef Chromy Wines has a state-of-the-art winery at the base of the vineyard at Relbia, just south of Launceston. The modern and minimalist exterior provides a home for some of the best winemaking equipment available. Fruit reception begins with a vibrating hopper that gently shakes the grapes into the destemmer. The grapes are pumped gently into the press through a peristaltic pump, using the same technology that transfers live fish or pumps blood during heart bypass surgery.
