Chef Cullin David
Food. Drinks. Roots.
So intricately tangled that by truly understanding one, you understand the others. It’s sharing what is most human, tracing a personal journey back to childhood and beyond. A medley of experience, taste and style, it is food you sway to.
Cullin David may have sharpened his knife as Executive Sous Chef under Jean-Francis Quaglia (Chef/owner) at Provence Marinaside but his roots run much deeper. Born and raised in Vancouver to Guyanese and Irish parents, Cullin has been in the kitchen since the tender age of 14. He took his young talent to VCC’s culinary program and found his calling.
Cutting his teeth in Vancouver’s dynamic restaurant scene, Cullin has cooked in fine dining restaurants since he was 16. His culinary journey kept him at Provence for the better part of a decade, shaping his understanding of gastronomy, unveiling his interest in travel and his pursuit of the true origins of flavour.
Reaching back to the Arawak Indians of the Caribbean and his beloved Guyana, Cullin’s time in the Amazon Rainforest unearthed a deep respect for the Caribbean indigenous people and the ingredients now prevalent in the flavours he creates as Head Chef and part owner of Gastown’s critically acclaimed gem, Calabash Caribbean Bistro.
With now more than 20 years in the industry, Chef Cullin David is set to share his love of food with us during an intimate evening of Food, Drinks and Roots at his multi-functional restaurant, Calabash, on January 26, 2017 at 6:30pm.
