Change the way you experience chocolate.

Learn how to taste and understand chocolate like a connoisseur by incorporating more than just your sense of taste and smell. As with wine and coffee, quality chocolate has many flavour notes and aromas locked within. This workshop will give you the tools you need to be an expert chocolate taster, as well as an informed critic and judge of chocolate. Learning how to taste is just as important as tasting itself, and all of us have the capability to taste and appreciate fine foods.

What makes this chocolate tasting different from others? Most tastings in general are exposure tastings. They expose you to the taste of an array of chocolates or fine foods. This workshops goes beyond that, not only exposing you to an array of fine and award winning chocolates, but also leaving you with practical tools and knowledge that you can use to be a smarter consumer and a true chocolate expert! You will acquiretools for tasting that you can use for a lifetime, as well as understand how to read labels, and be more discerning of the chocolate around you.

You will be introduced to what bean-to-bar chocolate means, and what artisan/craft chocolate is all about. We will delve into over 5000 years of historical geography to give you a glimpse into how it evolved into the different kinds of chocolate available today.

Afterwards, we enter into neurogastronomy to learn how flavour works. You will learn how to adjust yourself and environment in order to better "taste" food. Being informed about your food means knowing how to be completely satisfied by what you eat, and we will learn how to make that happen!

We will try local West Coast bean-to-bar dark chocolate, some international acclaimed bars to compare, as well as other cacao related drinks and products.

This workshop is for those aged 16+, with 8 seats per session. The small group size ensures everyone gets a chance to be involved and be heard. It will be an open forum where feedback enhances the experience.

Whether you are a curious foodie, chocolate enthusiast, or even work in the industry, you're sure to have a renewed passion for all things chocolate.

**Chocolate used will be dark, vegan, and gluten free.**
