Introducing Waska, an innovative flagship brand by Executive Chef Elias Salazar. Please join us as we launch a truly unique culinary experience that celebrates gastronomy with a sophisticated and refined approach to classic Peruvian cuisine.

Chef Elias will guide guests through an evening of soon-to-be Waska signature dishes, including Criollo, Nikkei, Chifa, Ceviches and Tiraditos. The curated menu will be complemented with complementary local craft beer from Lost Craft Brewery, Tequila Tromba, and of course, Pisco.

Food Menu

”Bolas de Yuca”

Crispy fried cassava balls stuffed with queso fresco. Topped with shaved white truffle, Moliterno pecorino, Huancaina sauce.

”Tiradito de Pulpo dos Sabores”

Thinly sliced Moroccan Octopus, olive oil, fresh lime, avocado, Botija live emulsion, celery cress.

“Concha a la Parmesana”

U10 scallop baked on the shell, Pisco+Aji Amarillo infused butter, Scallop roe bechamel, shaved Parmigiano.


(Peruvian style grilled skewer)

Wagyu Tenderloin, Aji Panca glaze, Yukon gold potatoes, Aji Rocoto sauce, choclo, Black garlic chimichurri, Maras salt.

“UNI + Red Mango Ceviche Nikkei”

Vancouver UNI, Red mango, thai chillies, red tobiko, chulpe, puffed rice cracker, black sesame, matcha salt, lemon balm cress, Nikkei style leche de tigre.

“Ceviche del Mercado”

Grouper, chulpe , choclo. squid chicharron, salsa criolla, sweet potato, Aji Charapita Leche de Tigre.

“La Causa Limeña”

Whipped Yukon gold potatoes, Aji Amarillo, pulled organic chicken breast in Yuzu infused mayonnaise, Avocado, Heirloom tomato, dehydrated Botija olive, quail egg.

“Carapulcra y su Pulpo a la Parrilla”

Dehydrated Peruvian potato and Aji Panca stew, Braised Ontario Pork belly, Grilled Moroccan Octopus “Anticuchero”, salsa chalaca, cilantro cress.

"Tres Leches y Lucuma”

Sponge cake, Lucuma fruit+Raw Honey 3 milk infusion, Peruvian chocolate ganache, fresh berries.

Adopting contemporary culinary techniques while preserving classical flavours, Waska delivers a seasonal menu of regional specialties with an uncompromising blend of locally sourced farm fresh produce, quality meats, and imported Peruvian staples.

Menu items will include traditional and modern Peruvian dishes like Criollo, Nikkei, Ceviches and Tiraditos, as well as an array of Peruvian inspired Cocktails and Local beer.

About Chef Elias Salzar
Born and raised in the port city of Callao Peru to a family with deep culinary roots, Chef Salazar’s foray into food started at a very early age. At his grandmother’s apron, he learned the fundamentals of traditional Peruvian cooking and she inspired him to pursue this new found passion as a career. Classically trained, Chef Salazar further refined his craft working the demanding kitchens of Lima and Miami to Toronto and Montreal.

2006 brought a series of independent ventures, providing private chef services to discerning clientele and hosting numerous beloved pop up events. During this period, he developed his own unique modern Peruvian style and quickly amassed a cult following.

2017 marked the opening of his first restaurant Kay Pacha in Toronto, garnering rave reviews and features in major publications including Toronto Life Magazine’s ‘Top 20 Restaurants’.

Now highly accomplished and growing in prominence as a leading authority of Peruvian cuisine in Canada, Chef Salazar aims to celebrate, educate and inspire with a brand new concept, Waska.
