Description

Jacob Martin, a Maestro Cortador from Joselito will travel from Spain to spend a full day teaching the proper carving of jamón in a hands-on workshop exploring the realm of Spanish cured meats. They will discuss the classifications, traditions, methods, and production of jamón from farming to meat curing. Participants will practise time-honoured slicing techniques on their own whole Jamón Serrano — with a market value of $375 — which they will take home with them, vacuum-packed for easy transportation and storage.

A light lunch of tapas and Spanish cheeses, included in the workshop, will provide an excellent opportunity to savour the world-renowned ingredients and culinary traditions of Spain and the lessons taught by our experts.

We will be running three sessions:

  • Monday, June 10, 9:00 am – 5:00 pmSOLD OUT

  • Wednesday, June 12, 9:00 am – 5:00 pm

Your workshop pass also includes a Certificate of Participation endorsed by Joselito, a Joselito apron, and a Jamón carving knife.

About Jacob Martin

Born and raised in Madrid, Jacob Martin has more than 20 years of experience in the hospitality industry. His passion for Iberian cured meats has taken Jacob from working at one of the most recognised gourmet stores in Madrid to being one of Joselito’s Official Master Ham Carvers.

With Joselito, he not only teaches courses but also attends events such as tastings and pairings where he has the opportunity to explain the specific characteristics of Joselito ham such as its health benefits, the life of Joselito’s Happy Pigs and their wellness in the meadows.

Jacob enjoys collaborating with the most prestigious restaurants around the world; many of whom are home to 3 Michelin Star Chefs. He is proud to be working with the most respected elite producer of Iberian hams and loves seeing people’s reactions when he shares his knowledge, and they try The Best Ham in The World.
