Minga is excited to be offering this workshop in partnership with Bella Roma Foods!

Ever felt a bit dizzy ready the long ingredient list for your sausages? Do you love the sizzle of sausage on a grill AND want to know where your food is coming from? The art of butchery and specifically the skill of sausage making is one that is a dying trade in today’s food industry. This workshop will teach you how easy it can be to make delicious, sausage in your own home with just a few locally sourced ingredients.

Learn to make your own breakfast and dinner sausages to your specific tastes without the fillers, preservatives, excessive fats, sodium, and gluten found in many store brands.

You will learn:

  • Which cuts of meat to use for sausage making
  • What type of casing to use
  • Perfecting the texture of your sausage for best cooking results
  • Seasoning and testing your mixture
  • How to chose casing and stuff your sausage
  • Where to find the ingredients you need to do this at home

You will want to attend this workshop if:

  • You love learning artesian skills in a small group environment
  • You have tried sausages from retail stores and been disappointed by their use of fillers, preservatives, dairy, gluten and other allergens.

You will get

  • Guidance from a skilled sausage maker who has over 10 years experience in the industry.
  • A package of your own hand-made breakfast sausages AND traditional sausages to take home.
  • A snack break featuring a sausage and pepper pasta.
  • A handout to hep you re-create the magic and continue practicing your new skill at home.

What to Bring: Dress in layers (you'll be working in a commercial kitchen, it could be chilly), close-toed shoes, an apron or clothes that can get messy

What You Get: A step-by-step handout, package of breakfast sausages and dinner sausages (made by you!), a delicious snack of penne pasta and sausage.

After getting my business degree and being fed up of sitting around an office all day, I decided to change gears and pursue a career in the food industry. Butchery runs across several generations of my family and I was fortunate to learn the art of traditional sausage making from a member of well known Italian family in the Guelph community who I worked for on and off for over 5 years. I am a believer that as an individual in the food industry we should work with groups in the community to share and discuss skills and knowledge that can help us as individuals become more active members of the foods system.

Cancellation Guidelines

  • Minga will provide a 100% refund for workshops cancelled by Minga.
  • If a registrant cancels a workshop with more than 5 days notice, a 100% refund will be issued.
  • If a registrant cancels with less than 5 days notice or does not show up, no refund will be issued.
  • We are unable to provide a refund after the workshop takes place.
  • The above policies apply for pre-registered workshops. Refunds or credits will not be issued for a missed class.
