On Sunday, June 23, presented in tandem with the GBC Wine Symposium, Uncork Ontario explores the Niagara region, offering a behind-the-scenes look at unique and exciting Ontario wine producers. Wine expert and educator Michael Fagan will lead the tour at all stops, to answer all your questions and to help you taste and tour as an insider.

The first stop will be at Big Head Wines. Proprietor and Head of Winemaking Andrzej Lipinski will discuss their approach to winemaking, and he'll lead a guided tasting of their unique and notable vintages. The wines are wild-fermented and employ a less-is-more, minimalist approach to winemaking.

From there, the tour proceeds to Two Sisters Vineyards, for delicious three-course lunch and tasting of wines, and then to their vineyard to learn about grape growing and terroir with Winemaker Adam Pearce. He’ll discuss the history of this famed family-run winery and his non-interventionist approach to winemaking that draws on the unique soil composition, terroir, and Two Sisters Vineyards’ great location in the Niagara River appellation.

The next stop will be 10Below Lounge at Peller Estates for a tasting of their Icewines. Snug and warm in a Peller Estates parka, tour members will enjoy the ultimate Icewine experience, in a lounge designed to mimic the wintry climate of the Icewine harvest. Kept at a frosty 10 degrees below zero and constructed out of over 13,000 kg of ice, this is the only ice lounge at any North American winery.

The last winery visited will be Domaine Queylus, with Chief Winemaker Thomas Bachelder and Winemaker Kelly Mason. They’ll explore the exquisite flavour profiles they cultivate for their wines, developed from the strong terroir and unique microclimate of their vineyard.

Your ticket includes transportation, tastings, and meals. At every stop, there will be time to stock up on your favourite wines. Single passes are $200 plus HST and Eventbrite processing fees. Itinerary:

  • 8:30 am: Coffee and light breakfast reception at the CHCA (300 Adelaide St. East)
  • 9:00 am: Depart George Brown College
  • 10:30 am: Tasting and tour at Big Head Winery
  • 12:15 pm: Lunch with wine pairings at Two Sisters Vineyards
  • 1:30 pm: Winery tour and tasting at Two Sisters Vineyards
  • 2:15 pm: Icewine tasting in the 10Below Lounge at Peller Estates
  • 3:45 pm: Winery tour and tasting at Domaine Queylus
  • 5:15 pm: Depart for Toronto
  • 6:30 pm: Approximate arrival time back at George Brown College
