Description

For the first time in Metro Vancouver, wagashi master Junichi Mitsubori will be teaching a hands-on wagashi workshop where attendees will learn how to make beautiful Japanese desserts!

Junichi Mitsubori is a world-famous wagashi master, a third-generation wagashi artisan of the traditional Japanese sweets store, Izumiya (いづみや) in Yokosuka, Japan, and the director of the Association of Japanese Sweets.

In this all day master's workshop you will learn to how to create various wagashi designs, from making the nerikiri (bean paste with mochi) to the various techniques used to mold, sculpt and color these edible masterpieces. You will be fully immersed in this beautiful and delicate art form - a unique and memorable learning experience. All materials will be provided. Classes will be conducted in Japanese with English translation.

Class One: Introduction to Nerikiri from Beans (豆からの煉切)

Saturday, June 1, 2019 | 9:30am-5:00pm

In this one day class, suitable for beginners, you will learn:

  • how to make nerikiri dough using Mitsubori's proprietary recipe
  • how to cook various bean pastes from scratch
  • the foundation of adzuki bean filling production
  • colour adjustments and gradation, techniques in blending colours
  • nerikiri wrapping techniques
  • basic column and sphere shaping and forming techniques
  • making 3 designs as shown

Class Two: Nerikiri II (煉切)

Sunday, June 2, 2019 | 9:30am-5:00pm

In this one day class, suitable for beginners, you will learn:

  • colour adjustments and gradation, techniques in blending colours
  • nerikiri wrapping techniques
  • basic column and sphere shaping and forming techniques
  • about various tools and techniques when adding effects, contours, textures, etc
  • 6 designs, including a Canada special edition, as shown

You can book your spot online, or register in person or over the phone directly with the Nikkei Centre.

Please note: if the class does not meet the minimum number of students, it may be rescheduled or cancelled. In this case, class fees will be refunded in full (excluding the nonrefundable Eventbrite fee).
