Welcome to WILDCARD NYE At Prairie Dog Brewing! Join us on December 31, 2025 at 7:00 PM for a night to remember! Let's toast to new beginnings, good times, and great beer. Don't miss out on the fun and excitement as we countdown to midnight.

You'll begin your evening with a four course meal expertly created by our kitchen team, then get your groove on with Calgary's party band WildCard starting at 9:00pm. The evening also includes a build your own late night poutine bar!

Date: December 31, 2025 with seatings at 7:00pm, 7:30pm and 8:00pm

Coming out with your besties? We encourage you to order your tickets all together so we can seat you all together - Groups of 8 or more who purchase on one order will get a complimentary bottle of bubbles for your table!

New Year's Eve - Four Course Dinner Menu

First Course - Choice of:

1. Smoked Beet & Apple Salad - Maple balsamic dressing, goat cheese, pickled onions and fried yams
2. House Facaccia - Trio of red pepper hummus, olive tapenade, balsamic vinegar
3. Roasted Butternut Squash Soup - Sage, coconut cream, pumpkin seeds, cinnamon, apples

Second Course - Choice of:

1. Confit Duck Wings - Brome Lake duck, maple-orange glaze, jalapeños
2. Mushroom Toast - Smoked mushroom duxelles, brioche bun, goat cheese, reduced balsamic
3. Brisket Crostini - 8-hour smoked brisket, bacon jam, crispy shallots

Third Course - Choice of:

1. Beef Short Rib - Smoked & braised, demi-glace, leek pomme purée, broccolini, fried leeks
2. Chicken Surpreme - Lemon-brined, gouda & bacon-stuffed, tallow baby red potatoes, asparagus, pan jus
3. Mushroom Risotto - Shiitake, cremini, portobello, and oyster mushrooms, shaved parmeson, pea shoots, grilled lemon
4. Apple-Crusted Pork Tenderloin - Alberta pork, leek pomme purée, carrots, roasted beets, mustard demi-glace, apple sauce

Fourth Course Dessert - Choice of:

1. Maple Cr˙eme Brûlée - Fresh berries, mint
2. Cheesecake - Vanilla, graham crust, raspberry coulis
3. Strawberry Sorbet - Fresh strawberries, mint, blueberries
