Beef Tartare — hand-cut beef tartare, spicy crispy corn tuile, mustard emulsion, fried pickled green peas

Salmon Tiradito (ask for gluten-free) — fresh salmon tiradito, ají amarillo oil, roasted avocado, baked asparagus & carrot, gochujang gelée, toasted bread

Pan-Fried Spring Rolls (vegan & gluten-free) — rice paper vegetable rolls, Asian dipping sauce, seaweed & rice crisp tuile

Main Course

Black Risotto & Seabass Mosaic (gluten-free) — squid-ink risotto, seabass mosaic, roasted red pepper coulis, lemon, seasonal greens

Fire-Cooked Tenderloin with Mushroom Sauce — butter-herb sautéed beef tenderloin, wild mushroom sauce, fire-roasted vegetables, caramelized cauliflower purée

Tempura Tofu on Mixed Purée (vegetarian - ask for vegan) — crispy tempura tofu, pea–potato–roasted yellow pepper purée, sautéed broccoli & cauliflower

Dessert

Dark Chocolate Tart (gluten-free - ask for vegan option) — silky dark chocolate tart, almond meringue tuile, pistachio ice cream
