In this talk, chef David Wolfman will explore Indigenous cuisine through the eyes of an "urban Indian chef,”. David will share stories of his own introduction to Indigenous cuisine as a child growing up in downtown Toronto, and as a young, classically trained chef who discovered his culture through First Nations, Métis and Inuit friends in the Toronto Indigenous community. His stories illustrate how culture shifts over time and place in light of global change – while his experiences as a chef, professor and TV show host reveal an evolution in identity and leave a legacy.
