Charming Cheeses: Community Kitchen with Sophia Banks

Overview

Join LUSH Valley and Chef Sophia Banks for a Community Kitchen where you'll learn the fundamentals of plant-based cheesemaking.

Chef Sophia will discuss how to prepare a variety of plant-based cheeses at home, including soft, melty cultured and non-cultured cheeses, and aged cheeses to slice and grate. Participants will learn how to confidently create delicious plant-based cheeses and experiment with flavours that will have everyone at the table craving more, whether they are dairy-free or not.


Allergy note: The recipes in this workshop will include tree nuts.


A full meal will not be served at this workshop, but there will be a range of snacks available.


Please bring a clean container with a lid to bring home samples.


Sophia Banks resides in Courtenay after two decades of working as a chef in Toronto and Montreal. Sophia is a recipe developer for several vegan food brands and has worked extensively with plant-based and gluten-free foods. Sophia has a passion for gardening, food security and food preservation.
