A bout our Chef:With over 15 years of experience in the sales sector, spanning across industries like warehousing, semiconductors, tires, distribution, and food manufacturing, James Villanueva has consistently demonstrated remarkable sales performance. However, a hidden passion for culinary arts and a profound interest in diverse cultures have been the driving forces behind his journey.For the past five years, James has been immersed in the Food &amp; Service industry, ignited by his culinary expertise and a deep-seated curiosity for different cultures. He has not only followed his passion but has also established and managed several successful food and beverage businesses, including Katmu Family Restaurant, Sugarcane I Like (known for its refreshing sugarcane juices), and a series of bakeshops and food stalls.At Katmu Family Restaurant, a venture he co-owns and actively manages since February 2020, James specializes in Barbecue, Steak, and Filipino Cuisine Dishes. Their extensive menu reflects a commitment to using the freshest ingredients, delivering the essence of homemade dishes to each diner's table. The restaurant's accolades include participation in Taste in Saskatchewan in 2021 and 2022 and active involvement in Folkfest Philippine Pavilion in 2022 and 2023. It also contributed to the USASK cooking immersion in 2020 and was the sole Filipino representative in Filipino Restaurant Month hosted by the Philippine Consulate in Calgary. Besides creating delectable dishes, James is dedicated to supporting community events and showcasing local artists. Further extending their reach, Katmu Family Restaurant's frozen products can be found in Filipino and Asian groceries throughout Saskatchewan. James is also a committed member of Filcas (Filipino-Canadian Association of Saskatchewan Inc.), where he actively engages in fostering connections and cultural exchange.A bout the food:Sinigang, a beloved Filipino dish, holds a special place in James's heart, representing more than just a culinary delight. It serves as a symbol of warmth and comfort, often featured during rainy seasons and special occasions such as birthdays and weddings. Sinigang is deeply rooted in James's family tradition, having been passed down through generations, making it an essential part of their daily culinary heritage.Pancit, another Filipino favorite, has seamlessly integrated itself into Filipino culture. Its popularity stems from its quick and easy preparation, making it a staple in Filipino cuisine.As James explores intercultural cooking, he is excited to share the vibrant flavors and stories behind these dishes, inviting others to join him on a culinary journey that celebrates diversity and the rich tapestry of flavors from around the world.
