With expert instruction, you’ll explore three iconic styles of bread:

  • Gluten-Free Sourdough - Create a naturally fermented loaf using a gluten-free starter. Learn the science of fermentation and how to build flavour, crust, and crumb without gluten.
  • Gluten-Free Baguette - Discover how to shape, proof, and bake this French classic to achieve a golden crust and tender interior using a custom blend of gluten-free flours and psyllium husk.
  • Gluten-Free Bagels - Hand-shape, boil, and bake your own bagels with the perfect balance of chewiness and softness.


Throughout the session, you’ll gain practical insight into ingredient functionality-how alternative flours, starches, and natural binders such as psyllium husk or chia create structure and elasticity. You’ll also explore hydration levels, proofing techniques, and baking conditions that make gluten-free doughs rise and brown beautifully.
