Eat the Trees: Set yourself up for a sweet and savoury Fall with delicious locally foraged tree tips that turn into syrup!
Spruce Tip Syrup Making
Learn how to pruduce small batch Spruce Tip Syrup from local trees. It is a slow, natural, process, fuelled by sunshine and requiring very little maintenance until the end of the summer. In this session, you will set up your project and receive instructions on how to process your syrup at the end of the summer. We will go ahead rain or shine, so dress accordingly, and there will be walking outdoors in the community of Ketch Harbour on side roads.
You will need to bring a large mason jar with a lid and enough brown sugar to fill half the jar. There will be some extra jars and sugar available if this is a barrier for you.
Notes and Caveats
- Accessibility: Keirsten's House has steps at the front entrance and narrow doorways; let me know if you need extra assistance.
- Home Sweet Home: Rupert the dog and Tomkins the cat will be here to welcome you—they are both friendly. If you have concerns please let me know.
- Parking: The driveway has room for about 4 cars. When it is full, please park on the street. There are several other driveways belonging to neighbours close by, please resist the urge to park there!
What we'll do:
- Walk around outdoors, examining trees and picking ripe tips.
- Set up a jar of materials for you to take home that will turn into syrup by the end of the summer.
- Learn the maintenance steps and final processing of the syrup, and disuss ways to enjoy it.
What to Bring:
One large Mason Jar and enough brown sugar to fill half of it.
Barter Items:
Because this is a barter based learning experience, please bring an item (s) from the list below for the host of this workshop. If you aren't able to bring something from the list, bring what you can, or bring nothing. You are welcome to attend in any case.

- home grown salad greens
- herbal tea
- Small or extra small mason jars
- fresh chive flowers
- a ziplock bag of frsh dandilion flowers (from an area without dog pee/poop)
- rubarb
